Why add lard to chicken cutlets: a simple life hack

Most often, cutlets are made from chicken. But to make them hold their shape perfectly, juicy and tender, some simple ingredients are added to the minced meat.
The recipe for chicken cutlets was published on one of the cooking blogs (we_eat_at_home_) on Instagram. According to the recipe, you need to add lard and bread, previously soaked in milk, to the minced meat. This cooking technology makes the cutlets very juicy and tender at the same time, as if they melt in your mouth.
Ingredients:
- chicken fillet - 1.3 kg
- lard - 80 g
- parsley - 70 g
- garlic - 35 g
- lemon zest - 40 g
- bread - 120 g
- milk - 180 ml
- salt, pepper
- egg - 1 pc
Method of preparation:
1. Grind the fillet and lard through a meat grinder with a large grate.
2. Chop the parsley, garlic and lemon zest.
3. Add garlic, salt, pepper, lemon zest, parsley to the minced meat. Mix well.
4. Soak the bread in milk, then grind it in a meat grinder.
5. Add the bread and egg to the minced meat. Stir and leave in the refrigerator for 30 minutes.
6. After that, form the cutlets with wet hands and fry them in a frying pan for 2-3 minutes on each side.
