Not everyone can eat a whole bowl of boiled oatmeal at once. That's why if there's leftover porridge the next day, it automatically goes in the trash. But it's much better to make a full meal out of the leftovers.
The idea of making a cupcake from yesterday's boiled oatmeal was published on the Instagram page of food blogger Oksana Vasurchak (ok.vasurchak). It turns out to be a full-fledged dessert.
Ingredients:
- leftover oatmeal - 120 g
- 1 egg
- a spoonful of ricotta (optional)
- a handful of almond flakes (optional)
- 2 teaspoons of all-purpose flour
- 1 tsp. baking powder
Method of preparation:
1. Combine oatmeal, egg, cottage cheese and nuts in a blender, if desired.
2. Blend everything.
3. Add the flour and mix.
4. Add baking powder, mix.
5. You can send it to a preheated slow cooker (on parchment or in a baking dish) - "bake" mode for 40 minutes. Or in the oven on parchment or in a baking dish at 140-160 degrees for 40-60 minutes.
6. You can also cook the dish in a frying pan - make it like a big pancake or put it in small pancakes. Fry over low heat under a lid, then turn over.
