What to cook with beets: top 4 easy and simple dishes
Beetroot is a healthy, budget-friendly, and always available vegetable that can be used to make many dishes: salads, appetizers, sauces, and borscht. It's worth noting that all of them are very quick to prepare and suitable for every day.
Food blogger Oksana Kretsul (oksana_kretsul) shared a selection of four recipes on her Instagram page that can be made from beets: salads and appetizers.
Salad 1
Ingredients:
- boiled beetroot
- onion
- salt
- sugar
- oil
- feta
- walnuts
- sauce
- sugar (cane sugar)
Method of preparation:
1. Grind the boiled beets on a coarse grater.
2. Nuts lightly fry in a frying pan.
3. Chop the onion and caramelize it in a frying pan. To do this, fry it with salt, constantly changing the heat intensity, and after 2 minutes add sugar and cook until it is completely dissolved.
4. Mix the beets, sauce, onions and nuts. Stir and sprinkle feta on top.
Salad 2
Ingredients:
- boiled beetroot
- feta
Method of preparation:
1. Chop the boiled beets on a fine grater.
2. Mix the grated beets with feta. Serve as is or form into balls and garnish with nuts.
Salad 3
Ingredients:
- beetroot
- onion
- salt
- sauce
- apple/wine vinegar
Method of preparation:
1. Cut the boiled beets into cubes.
2. Chop the onion and marinate in vinegar for 10-15 minutes, then rinse under running water and dry with a towel.
3. Add the cooked onion to the beets, salt and mix.
Beetroot appetizer
Ingredients:
- beetroot
- oil
- pepper
- feta
- nuts
Method of preparation:
1. Peel the raw beets, remove the skin, and cut into thin slices. Put the slices on a greased baking sheet and bake for 10-20 minutes on each side at 180 degrees.
2. When you take the baked beets out of the oven, fold the pieces in half and let them cool in this form.
3. Then put the feta inside, and roll the pieces in chopped nuts.
Sauce for salads:
- olive oil
- wine/apple cider vinegar
- sugar
- salt
Method of preparation:
1. Just mix the ingredients.
