What to add to the liver to make it soft and not bitter: an original idea

It often happens that when you cook liver, it turns out to be dense, dry, and bitter. But this can be avoided if you know some culinary life hacks. For example, the liver can be pre-marinated with spices and starch, and then cooked in a sauce. Marinating will prevent the liver from becoming hard, and the sauce will add a spicy flavor and remove excess bitterness.
The recipe for fried liver in soy sauce was shared by food blogger Zhanna (zha457) on her Instagram page.
Ingredients:
- chicken liver - 1 kg
- salt - 1 tbsp
- potato starch - 3 tbsp
- garlic - 5-7 cloves
- paprika - 1 tbsp
- vegetable oil - 70 ml
- onion - 1 pc
For the sauce:
- soy sauce - 7 tbsp. l.
- tomato paste - 3 tbsp
- honey - 2 tbsp
- boiling water - 100 ml
Method of preparation:
1. Wash the liver and put it in a plastic bag.
2. Lightly beat the liver with a kitchen hammer right in the bag.
3. Add salt, starch, paprika, and oil to the liver. Squeeze the garlic. Stir the liver and leave to marinate for 20 minutes.
4. Meanwhile, prepare the sauce. Mix soy sauce, tomato paste, honey, and boiling water. Stir well.
5. Cut the onion into half rings and fry together with the liver. Fry for about 10 minutes.
6. Pour the sauce and cook under the lid for 15 minutes.
