Uzbek samsa: juicy and tasty dish according to an authentic recipe

Samsa is an incredibly popular dish of Uzbek cuisine. It looks like an ordinary triangular pie with a filling, but in fact, samsa is a completely independent dish that has its own cooking technology using high temperatures.

The recipe for samsa was shared on Instagram by food blogger Yulia Senych. In it, the chef also explained how to make puff pastry with her own hands.

Ingredients for the dough

  • Flour - 500 gr
  • Water - 250 ml
  • Salt - 1 tsp
  • Butter for greasing

Ingredients for the filling

  • Meat - 500 gr
  • Onion - 350 gr
  • Salt - 1 tsp
  • Zira
  • Black pepper
  • Chili pepper

Method of preparation

1. Add salt to the sifted flour and pour in water at room temperature. Knead a stiff dough. Wrap in cling film and set aside for 30 minutes.

2. Finely chop the meat into pieces of about 1 cm, chop the onion very finely. Add your favorite spices and mix well.

3. Divide the dough into 2 parts, put one part under a towel or film to prevent it from getting airborne. Roll out the other part into a thin rectangle with a maximum thickness of 1 mm.

4. Grease the dough with soft butter and roll it into a roll. Cut into eight pieces and press each one with the palm of your hand along the cut. Put it in the freezer for 20-30 minutes until the butter has hardened.

5. Repeat the same steps with the other piece of dough.

6. Roll out each piece of dough to a diameter of about 15 cm. Put a full tablespoon of filling and pinch the edges.

7. Put the samsa on parchment, brush with egg yolk and sprinkle with sesame seeds. Put it in the oven preheated to 180 degrees for 35-45 minutes.
