Pea soup is a very popular dish that is not always tasty. The peas often turn out to be hard, and the broth is rather bland. In fact, the secret to perfect taste lies in a few simple ingredients.
The idea of making the perfect pea soup was published on the Instagram page of food blogger Maksym with the nickname nekuhar. The broth for the dish should be made from pork and fennel. Smoked bacon will add a special piquancy. You should also use both yellow and green peas.
Ingredients for 2.5 liters
For the broth:
- 400 grams of pork
- 2 onions
- 1 fennel root
- 1 carrot
For the filling:
- 150 ml of green dry peas
- 150 ml of yellow dry peas
- 150 grams of smoked bacon
- 2 small onions
- 2 medium carrots
- 1 large potato
- bay leaves
- salt
- oil
For the croutons:
- any bread
- olive or vegetable oil
- oregano
Method of preparation:
1. Rinse peas until they run clear and soak in plenty of drinking water for 1 day. After 12 hours, change the water.
2. Put the meat in a pot of water. When it boils, remove the foam and add root vegetables.
3. Remove the foam again.
4. Drain the peas and add to the pan.
5. Cook the broth over low heat with the lid ajar for an hour and a half. Meanwhile, cut bacon, onions, carrots and potatoes into small cubes.
6. Fry the bacon in a frying pan, add onions and carrots and fry them as well.
7. When the broth is ready, remove the root vegetables, add the potatoes and roast, cook for another 20-25 minutes, season with salt, and add the bay leaf.
8. Cut the bread into cubes, put on a baking sheet, pour a little oil and sprinkle with oregano. Bake at 180 degrees for 10-15 minutes in the oven with the "grill" mode on, stirring once during cooking.
9. Serve the soup in deep bowls with breadcrumbs, black pepper and chopped herbs.
