Babgulyas and bohrach are traditional dishes of Transcarpathian cuisine. The first is famous for its nutritional value, wonderful aroma, and unsurpassed taste, which cannot be compared to anything else.

Ingredients

  • smoked ribs - 500 gr
  • smoked sausage - 200 gr
  • canned or boiled beans - 500 g
  • water - 2500 ml
  • carrots - 200 g
  • tomato puree or homemade ketchup - 300 ml
  • onion - 400 g
  • celery root - 150 g
  • salt
  • pepper
  • smoked paprika - 1 tbsp
  • bay leaf - 2 pcs
  • peppercorns - 10 pcs
  • flour - 2 tbsp

Ingredients for dumplings

  • eggs - 1 pc
  • salt
  • flour - 90-110 g

Method of preparation

1. Pour water into a saucepan. Add ribs, two whole onions, salt, bay leaf and peppercorns. Cook for 15 minutes.

2. Add diced carrots and celery root and cook for another 15 minutes.

3. Pour oil into the frying pan, add chopped onion and fry for 5 minutes. Add chopped smoked sausage and fry for another 5-6 minutes.

4. Add salt, pepper, and paprika and mix well. Add flour and stir well again.

5. Pour in 3-4 ladles of water. Add tomato puree or tomatoes in their own juice. Stir well and simmer for 10 minutes.

6. Take the onions out of the pan and discard them. Take out the ribs, separate the meat from the bone, cut them into small pieces, and throw them back into the pan. Add the fat from the pan. Add hot pepper for flavor, and add salt and pepper to taste.

7. Add canned beans and cook for 15 minutes.

8. While the dish is cooking, make halushky (dumplings). Combine egg with salt and gradually add flour until you get a soft dough. Make balls. These will be the dumplings.

9. Add the dumplings and cook for another 7 minutes.
