Sumy chestnuts cake: a real gem of eastern Ukraine

The Sumy Chestnuts cake, or, as it is also called, Sumy Loaf, is a real gem of northeastern Ukraine. It is a traditional dessert that is served both for a festive table and just to please your loved ones.

Sumy chestnuts do not require expensive ingredients or special skills. So, anyone with a minimum set of tools can make this cake. The recipe for this dessert was shared on Instagram by a food blogger with the nickname recepti_dariko.

Ingredients for the dough for a 22 cm mold:

  • Proteins - 200 g (about 6 pieces)
  • Salt - a pinch
  • Sugar - 235 g
  • Vanilla sugar - 1 tsp
  • Peeled roasted peanuts - 150 g
  • Flour - 45 g

Ingredients for the cream:

  • Boiled condensed milk - 380 g
  • Butter 82% - 200 gr

Ingredients for decorating the cake:

  • Chocolate 56% - 80 gr
  • Butter - 20 g
  • Cocoa - 1-2 tsp.

Method of preparation:

1. Grind the peanuts into crumbs with a blender and mix with flour and sugar.

2. Add salt to the whites and beat for 1.5 minutes, then add sugar and vanilla sugar. Continue beating until stiff peaks form.

3. Add the dry mixture to the proteins in several stages, mixing thoroughly with a spatula.

4. Make 2 cakes, and bake simultaneously on convection at 150 degrees for 2 hours.

5. Leave the finished cakes to rest overnight or for a day.

6. Cut circles 22 cm in diameter from the cakes, and make crumbs from the rest.

7. To prepare the cream, beat all the ingredients with a blender at room temperature.

8. Set aside 2 tbsp of the cream and add cocoa.

9. Set aside another 2 tbsp of cream for decorating the cake.

10. Grease the cake pan with cream and put the first layer. Spread 2/3 of the total amount of cream on top and cover with the second cake.

11. Cover the sides of the cake with the remaining cream.

12. Decorate the cake with the cream that was set aside in advance and melted chocolate mixed with butter.
