A tall, fluffy and soft sponge cake is every housewife's dream. Unfortunately, such baking does not always work out the first time even with proper preparation and proportions. Thus, you need to know some basic rules.
Confectioner Yevhenia (evgenia_perig) shared the basic rules for making a fluffy and soft sponge cake on her Instagram page.
Rule 1
According to the expert, whipping eggs well is the key to success. So, you need to beat them at the maximum speed of the mixer for at least 10 minutes.
Rule 2
At the stage of batter preparation, it is important to combine dry ingredients with liquid ones. As a rule, dry ingredients should be added to the wet ones in portions to make the sponge cake as airy as possible.
Rule 3
When the batter is ready, fill the mold with it to 3\4 only because the sponge cake will rise during baking.
Rule 4
Bake the sponge cake only in a preheated oven. As for the temperature, the chef advises baking at 165 degrees.
Rule 5
Cool the finished sponge cake completely and only then divide it into cakes. If we are talking about a classic sponge cake, it can be cooled by turning the mold upside down.
