Traditionally, dough for any baked goods is made with raw eggs. But when it comes to cookies, you can use boiled eggs. If you add the boiled yolk, the texture will be very juicy and crispy.

The idea of making homemade crispy cookies with boiled egg yolks was published on the Instagram page of food blogger Tally Koroleva (tallykoroleva).

Ingredients:

  • 3 boiled chicken egg yolks
  • 75 g of icing sugar
  • 150 g of butter at room temperature
  • 150 g of sifted flour
  • 100 g of starch
  • 1/2 tsp of vanilla extract
  • 1/2 tsp of salt
  • powdered sugar for decoration

Method of preparation:

1. Put boiled egg yolks in a bowl and mash with a fork. Add butter, vanilla extract, and salt.

2. Measure out the required amount of powdered sugar and mix. Add the sifted flour and starch.

3. At first, the dough will crumble into crumbs, but after kneading, you get a soft and elastic dough.

4. Gather into a ball, wrap in cling film. Put it in the refrigerator for at least 1 hour.

5. After the dough has cooled well, start forming the cookies. Cut a small amount of dough, put it on parchment paper and roll it out into a 4-5 mm thick layer.

6. Cut out the cookies with a cookie cutter.

7. Bake at 170 °C for about 15 minutes.
