A simple tangerine cheesecake will perfectly complement the New Year's atmosphere. You don't even have to bake it - just what you need for the holidays. The dish is very bright, and the flavors from different layers will perfectly complement each other.
The idea of making tangerine cheesecake without baking was published on the Instagram page of food blogger Iryna Kozachuk (irina_kozachuk_). The dessert hardens very quickly.
Ingredients for the base:
- 150 g sugar biscuits (like "For coffee")
- 70 g of butter
Ingredients for the curd mass:
- 400 g of cream cheese
- 200 ml of cream (I use 30%)
- 100 g of icing sugar
- 9 g of gelatin
- 42 ml of water
Ingredients for the tangerine layer:
- 300 g tangerine juice
- 1 tbsp of sugar
- 6 g of gelatin
- 36 ml of water
Method of preparation:
1. For the base, grind the cookies into crumbs, add the melted butter, mix.
2. Pour into the mold, level the bottom.
3. Leave in the refrigerator.
4. For the creamy layer, cover the gelatin with water.
5. Bring the cream to a boil and dissolve the swollen gelatin.
6. Pour the powdered sugar into the cream cheese at room temperature, whisk.
7. While continuing to beat at low speed, gradually pour in the cream.
8. Pour the mixture onto the base and refrigerate.
9. For tangerine layer gelatin pour water.
10. Squeeze the juice from the tangerines, add sugar and bring to a boil and dissolve the sugar.
11. Dissolve the swollen gelatin.
12. When the mass is completely cooled, pour it on the frozen cream layer. Leave in the refrigerator for 5-6 hours. To remove the cheesecake from the mold, carefully run a knife along the walls.
13. Tip: It is better to squeeze the juice from tangerines through a juicer or by hand. If you kill it with a blender, it can be bitter.
