Simple oatmeal cookies without sugar and flour in 20 minutes: recipe

Oatmeal cookies are one of the most favorite and easiest types of homemade cookies to make. The reasons are the simplicity and speed of preparation, the benefits of oatmeal, and the ability to combine them deliciously with other ingredients such as chocolate, raisins, or nuts.

The recipe for oatmeal cookies with nuts and dried fruit was shared by nutritionist Anna Kopus (ks_anyta) on her Instagram page.

Ingredients:

  • oatmeal - 100 g
  • ground oatmeal (flour) - 150 g
  • honey - 3 tbsp (or sugar/sugar substitute)
  • raisins/dried cranberries - 2 tbsp
  • ground poppy seeds/nuts - 2 tbsp
  • vegetable oil or ghee - 3 tbsp (preferably heat-resistant)
  • eggs - 2 pcs.
  • baking powder - 1/2 tsp (baking soda 1/4 tsp + lemon juice)
  • vanilla, cinnamon, salt

Method of preparation:

1. Mix all dry ingredients and dried fruits.

2. Beat eggs, honey and oil separately.

3. Mix the dry and liquid ingredients until the dough is smooth. It will be sticky, but quite thick (at this stage, you can add more flakes/flour to bring it to the consistency).

4. Form cookies with wet hands. Put them on the parchment.

5. Bake at 150 C for 10-15 minutes.
