Ingredients:
- gelatin 10 g + water 50 ml
- sugar 220 g + water 60 g
- lemon zest
- lemon juice - 20 g
- dye
Method of preparation:
1. Pour gelatin with water and wait 10 minutes until it swells.
2. Pour sugar with water and put on fire.
3. When the mass begins to boil, add the zest and turn off.
4. At the same time, melt the gelatin in the microwave (do not boil) and add to the bowl.
5. Start whisking, adding the syrup.
6. When the mass turns white, add the juice and dye and beat for another 10 minutes.
7. Put the mass into a mold covered with cling film and refrigerate until it hardens.
8. Sprinkle the finished marshmallows with a mixture of starch and powdered sugar.
