Ribs in apple cider: very soft and juicy

Ribs are a great meat for roasting or stewing. This part is cooked quite quickly. A delicious crispy crust is formed during cooking. And to make the texture juicy and soft, you should use apple cider.

The idea of cooking ribs in apple cider was published on the Instagram page of chef Valentyna Sayenko (valya__saenko).

Ribs in apple cider: very soft and juicy


  • veal ribs - 1.5 kg
  • apples - 3 pieces
  • garlic - 1 head
  • thyme - 5 sprigs and a few more for serving
  • medium carrots - 2 pcs
  • onions - 2 pcs
  • flour - 100-200 g
  • apple cider - 0.5 liters
  • broth (can be replaced with water) - 0.5 liters
  • salt, pepper, bay leaves

Method of preparation:

1. Cut the ribs into 1 piece.

2. Roll each rib in flour and fry until golden brown.

3. Fry and put in a large pot or cauldron where everything will be stewed.

4. Cut the onion into strips, fry in the same pan and add to the ribs.

5. Also add to the ribs: carrots, cut into fairly large pieces, thyme, garlic, chopped apples into 4 parts.

6. Pour the cider and broth over the ribs (to cover the ribs) and put it to simmer for at least 2 hours.

7. Half an hour before cooking, add salt and pepper to taste and bay leaves. It tastes best with mashed potatoes. Sprinkle with thyme when serving.
