Puff pastry should always be kept in the freezer. If you don't have much time to cook, it makes a great base for quick meals. For example, a hearty cheese and spinach pie.

Ingredients:
- 500 g. puff pastry
- 160 g. of cheese
- 75 g of fresh spinach
- 2 eggs
- salt, herbs of Provence
- yolk
- sesame seeds
Method of preparation:
1. Grate the cheese, add chopped spinach, eggs, salt, Provencal herbs and mix well.
2. Put the thawed puff pastry on a floured surface and roll it out a little.
3. Put the filling on one half, back 1 cm from the edge and cover with the other half, tightly pinch the edges.
4. Put the pie on a baking sheet covered with parchment and make cuts.
5. Brush with egg yolk and sprinkle with sesame seeds.
6. Put in a preheated 180 degree oven for 20-30 minutes until golden brown.
