The recipe for this extraordinary dessert was shared by a food blogger with the nickname thefoodhub.by_ilona. On Instagram, she shared how to make a pistachio carrot cupcake without getting tired in the kitchen.
Ingredients
- Carrots - 200 gr
- Kefir or yogurt - 180 gr
- Eggs - 2 pcs
- Butter - 150 gr
- Sugar - 200 gr
- Flour - 240 g
- Baking powder - 1.5 tsp
- Soda - 1 tsp.
- Cinnamon - 1 tsp
- Pistachios - 100 g
Ingredients for the cream
- Cream cheese - 200 gr
- Cream from 30% - 250 gr
- Powdered sugar - 50 gr
- Vanilla sugar - 1 tsp.
The way of preparation
1.Mix sugar with melted butter. Add eggs, yogurt and all dry ingredients. Stir until smooth.
2. Chop the pistachios. Add most of the nuts to the mass. Leave the smaller part for garnishing.
3. Stir the mixture until smooth and transfer to a 24 cm baking dish.
4. Bake in the oven for 40-45 minutes at 190 degrees.
5. While the cupcake is baking, prepare the cream. Whip the cream with powdered sugar until it thickens.
6. Add the cream cheese and vanilla sugar and beat well again.
7. Take the cupcake out of the oven, let it cool completely, spread it with cream and decorate with nuts.
