Pilaf that always turns out crumbly: how to cook the dish properly

Pilaf is a hearty rice dish that can be prepared in different ways: with meat, without meat, with spices, onions, and garlic. Perfectly cooked pilaf is crumbly, does not stick together, and is very flavorful. The type of cereal and the proportions of water are of great importance.
Food blogger Yana (gordynovskaya) shared a recipe for pilaf with meat and spices, which is cooked in a frying pan, on her Instagram page.
Ingredients:
- steamed rice (basmati, jasmine, or long-grain varieties)
- meat
- carrot
- onion
- garlic - 2 cloves
- raisins
- prunes
- dry barberry
- spices: cumin, coriander, oregano, turmeric/pilaf mix
Method of preparation:
1. Cut carrots into strips and dice onion. Fry until soft.
2. Cut and add fillet. Season with salt. Fry until golden brown.
3. Add all the spices and mix. Add rice and fry, stirring, for 5 minutes.
4. Add raisins, barberry, prunes and garlic. Pour boiling water, salt, and cook under the lid for 15 minutes.
5. Turn off the heat, cover the pan with a towel, then with a lid, and leave it for 20 minutes to let the dish brew.
