Ossetian pie in 15 minutes: with seasonal herbs and cheese

Ossetian pie is a very simple popular pastry. The dough is versatile, and any favorite filling can be combined with it. But in spring, you always want something light and nutritious. Therefore, the best option is a lot of greens and cheese.
The idea of making an Ossetian pie with greens was published on the vsi_recepty (all_recipes) cooking page on Instagram. This version uses spinach.
Ingredients for the dough (for 3 pies):
- flour - 300 g
- dry yeast - 5 g
- salt - 1/2 tsp
- sugar - 10 g
- milk - 240 g
- sour cream - 60 g
- oil
Ingredients for the filling:
- spinach - 300 g
- Suluguni cheese - 250 g
- salt and pepper - to taste
Method of preparation:
1. Sift the flour into a bowl, add the dry yeast, salt, sugar and mix.
2. Heat the milk and sour cream to room temperature (be careful not to overheat).
3. Add milk and sour cream to the dry ingredients. Knead the dough.
4. Knead in a food processor or by hand, periodically greasing the surface with vegetable oil, for 10-15 minutes.
5. Grease a dough bowl with oil and transfer the dough. Leave for an hour, after 30 minutes, knead the dough a little.
6. For the filling, evaporate excess moisture from the spinach, season with salt and pepper, let cool for 10 minutes, grate the cheese, and mix with the spinach.
7. Divide the dough and filling into 3 parts, roll out the dough ball a little, put the filling in the center, and secure the edges.
8. Put the dough on parchment paper and make a small hole in the center for steam to escape.
9. Bake for 12-15 minutes at 220 degrees.
10. Grease the finished cake with a piece of butter.
11. Serve in a slide of three.
