Ingredients:

  • Onion – 400 gr
  • Shallots – 200 gr
  • Butter – 80 gr
  • Olive oil – 40 ml
  • Flour – 2 tbsp
  • Soy sauce – 50 ml
  • White dry wine – 100 ml
  • Chicken broth – 550 ml
  • Parmesan cheese – 60 g
  • Cheese that melts well – 200 gr
  • Thyme – 2-3 sprigs
  • Salt
  • Baguette
  • Garlic – 1 clove

How to cook:

1. Cut the onion into strips.

2. Melt the butter in a heavy-bottomed saucepan and add the oil. Add the onion and fry until caramelized. The vegetable can be considered ready when it becomes soft and acquires a caramel color.

3. Add the flour and mix well.

4. Add the wine and continue cooking, stirring.

5. When the wine has evaporated, add the broth, soy sauce, and thyme. Bring to a boil.

6. Add Parmesan, mix well, and remove from heat.

7. Cut the baguette, season with olive oil, and put it in a 200-degree oven for 5-7 minutes. Rub the finished pieces with garlic.

8. Pour the soup into heat-resistant bowls, top with cheese, then the baguette and cheese again.

9. Put it in the oven preheated to 180 degrees for about 5 minutes to melt the cheese and form a crust.
