Moroccan pancakes for Shrovetide 2024: what dough to make

You can make a lot of different pancakes for Shrovetide. In addition to the usual dairy pancakes, they can be Moroccan. The products are very soft and porous, and any filling is suitable for them.
The idea of making Moroccan pancakes was published on the Instagram page of food blogger Victoria with the nickname cook_with_me_at_home. The dough does not tear.
Ingredients:
- semolina - 250 g
- flour - 40 g
- sugar - 3 tbsp
- salt - 1/4 tsp
- dry yeast - 5 g
- baking powder - 2 tsp.
- warm water - 500 ml
For the filling:
- cherry jam
- chocolate paste
- banana
But you can use any to your taste (both sweet and salty).
Method of preparation:
1. Pour all dry ingredients (semolina, flour, sugar, salt, baking powder, dry yeast) into a bowl and mix.
2. Pour in warm water (t40).
3. Beat for 2-3 minutes with an immersion blender until bubbles and foam appear.
4. Cover with a towel and let stand for 15 minutes.
5. Stir the batter slightly and fry the pancakes over medium heat in a preheated dry frying pan for about 3 minutes. A lot of bubbles appear on the surface at once, when they all crack and the surface becomes matte, remove the pancake from the pan. Fry only on one side.
6. Put the filling on the still hot pancake, on the non-fried side, and fasten it like a dumpling.
