Medovik is a very popular cake that can be found at almost every celebration in Ukraine. The cooking process is quite long and multi-stage. But if you want to really surprise your guests and make your job easier, make Medivnik in a glass.
The idea of making a lazy "Medovik" in a glass with caramel honeycomb was published on the Instagram page of a food blogger with the nickname aleksa_litvish . The taste will pleasantly surprise you.
Ingredients for the dough:
- honey - 40 g
- sugar - 50 g
- butter - 50 g
- eggs - 1.5 pcs
- soda - 0.5 pcs
- salt - a pinch
- wheat flour - 100 g
How to make the dough:
1. Melt honey over low heat, add baking soda.
2. Stirring constantly, cook for 1-2 minutes until caramel color.
3. Add the butter and wait for it to melt.
4. Set aside to cool.
5. Beat eggs at maximum speed for 5 minutes, gradually adding sugar.
6. Add the mixture of honey and butter to the eggs and sift in the flour in parts. Stir to combine.
7. Flatten the dough with a spatula on a parchment or silicone sheet 0.5 cm high (you can make it thicker if you like).
8. Bake in a preheated 160 degree oven for 6-8 minutes.
Ingredients for the sour cream:
- sour cream - 600 g
- Powdered sugar - 80 g
- cream 33% - 280 g
Method of preparation:
1. The day before cooking, put the sour cream in cheesecloth and hang it over a bowl in the refrigerator overnight. This will help to remove excess moisture (whey), and the sour cream will give the desired density in the cream. Set aside the dripping liquid and use the sour cream.
2. Whip the cold cream until soft peaks form.
3. Combine sour cream, powdered sugar, cream, and beat together for half a minute until the desired texture is achieved.
Ingredients for the honey soak:
- honey - 30 g
- hot water - 50 g
- lemon juice - 0.5 tsp.
Method of preparation:
1. Heat everything over low heat until it dissolves.
2. Soak the cake.
3. Break into pieces.
4. Put the layers of dough-cream.
5. Break the "honeycomb" on top.
Ingredients for the honeycomb:
- honey - 70 g
- sugar - 130 g
- water - 25 g
- soda - 6 g
How to make honeycomb:
1. Melt the sugar, honey, water over medium heat in a saucepan or in a saucepan with a thick bottom.
2. Bring to a temperature of 160 degrees (if without a thermometer, when the bubbles have calmed down a bit and the color is deep caramel).
3. Remove from heat, immediately add baking soda.
4. Stir vigorously with a silicone spatula until smooth (up to 30 seconds to prevent it from settling).
5. Pour onto a silicone mat or into a silicone mold that stands on a metal grill.
6. Leave for 15 minutes to harden.
