Mackerel with vegetable sauce: an unusual variant of the dish

Mackerel is one of the most popular fish species in Ukraine. It is a budget-friendly and quite nutritious fish that even children like to eat. There are many recipes for cooking mackerel. It can be fried in pieces or baked whole with potatoes.

Recently, food blogger Valerii Ponomar shared a recipe for mackerel with a very interesting vegetable sauce on Instagram. By the way, this sauce can be used to cook other dishes as well.

Ingredients

  • mackerel - 1 pc
  • tomato - 2-3 pieces
  • onion - 1 pc
  • garlic - 3-4 cloves
  • thyme - 1 sprig
  • dried chili - ½ tsp.
  • cream from 30% - 100 ml
  • salt
  • pepper
  • capers - 3-4 pcs
  • anchovies - 2 pcs (fillets)

The way of cooking

1. Cut vegetables into large pieces and add salt, pepper and thyme to taste. Brush with oil and put in the oven at 200 degrees for 20 minutes.

2. Cut mackerel into fillets, remove excess bones and add salt and pepper. Sprinkle with ground chili. Brush the skin side with oil. Put the fish on the parchment skin side up and bake for 20 minutes at 180 degrees.

3. Grind the baked vegetables in a blender, add cream and pass through a sieve. Add finely chopped capers and anchovies to the finished sauce.
