Homemade, delicious and very easy to prepare pastries are muffins. You can make them with milk, sour cream, and different doughs. For the filling, you can use berries, zest, fruit, honey, nuts, chocolate.
Food bloggerIrena (irena_sportpro) shared a recipe for lean muffins without eggs, milk, sour cream, butter, and sugar on her Instagram page.
Ingredients for 6 pieces
- oat flour - 100 g
- oatmeal - 100 g
- orange - 2 pcs (220 g of juice)
- zest -1 tbsp
- dates -120 g
- dried fruits - 50 g
- baking powder - 5 g
- coconut or olive oil - 2 tbsp
- honey - 2 tbsp. l. or sugar substitute
For the watering:
- dark chocolate 100 g
- coconut/ordinary oil 1 tbsp.
- cocoa powder
Method of preparation:
1. Mix oat flour and oatmeal, add baking powder and salt.
2. Grate the zest and squeeze the juice from the oranges.
3. Beat the dried fruit with the oil separately, add to the total mass and pour with honey. Mix until smooth, adding a little water if necessary.
4. Put the resulting mass into a muffin tin. Bake at 180-200 degrees for 45 minutes.
5. For the icing, mix all the ingredients and melt in a water bath.
