Lush chocolate sponge cake that never falls: it's easy to prepare

A classic chocolate sponge cake is quite versatile, as it is suitable for making cakes and can be combined with any cream. The recipe is quite simple and, following all the proportions, the sponge cake is fluffy, soft, moderately moist, and never falls.

Food blogger Juliia Vilich (julia_vilich_food_blog) shared a recipe for a chocolate sponge cake with milk on her Instagram page, which is easy to prepare and has a perfect texture.

Recipe for chocolate sponge cake with milk

Ingredients:

  • eggs – 3 pcs (large)
  • sugar – 130 g
  • milk – 65 ml
  • vegetable oil – 50 ml
  • flour – 100 g
  • cocoa – 20 g
  • baking powder – 6 g

Method of preparation:

1. Lightly beat the eggs at room temperature until they increase in volume. Immediately add sugar and beat for 7 minutes until fluffy and light, which should increase at least three times.

2. Add milk and butter to the mixture. Mix until smooth on the low speed of the mixer.

3. Add the sifted and mixed cocoa, flour, and baking powder in two stages. Knead the dough with a whisk or silicone spatula clockwise until completely homogeneous. The dough should be as airy as possible.

4. Put the finished dough into a mold (at least 10 centimeters high) covered with parchment. Bake at 165 degrees for 50 minutes. Check for doneness with a wooden skewer.

5. Let the finished sponge cake cool in the mold for about 10 minutes, then remove it from the mold, put it on a wire rack, and leave it to cool completely.

6. After that, wrap the sponge cake in cling film and put it in the refrigerator for at least 5 hours.
