Ingredients
- yeast-free puff pastry - 1 kg
Ingredients for the cream
- milk - 500 ml
- sugar - 80 gr
- eggs - 2 pcs
- vanilla sugar - 1 p
- corn starch - 45 g
- butter - 50 g
Ingredients for cherry confit
- frozen cherries - 230 g
- sugar - 55 g
- corn starch - 15 g
- water - 20 ml
Method of preparation
1. Mix cherries with sugar in a saucepan and put on fire.
2. Dilute starch in water, pour it over cherries, cook until thickened and set aside to cool.
3. Prepare custard. Pour milk into a saucepan and add sugar and vanilla sugar.
4. Separately, break the eggs into a bowl, add cornstarch, mix gently until smooth, and pour milk a little at a time.
5. Pour the egg mixture through a sieve into a saucepan, stir, put on the fire, stirring constantly until thickened, and cook for 1-2 minutes.
6. Remove from the heat and add butter. Stir, transfer to a bowl, cover with cling film until it is in contact, and cool.
7. Mix the cooled custard with a mixer and put it into a pastry bag.
8. Defrost the puff pastry in the refrigerator and roll it out.
9. Divide into two equal parts and roll out each of them a little more.
10. Grease one of the pieces of dough with egg yolk, drawing 4 squares.
11. Put cream and cherry confit in each square.
12. Cover the top with the second part of the dough and pinch the edges.
13. Divide the future product into 4 parts and place them on a baking sheet with parchment.
14. Make cuts in each pie and brush with egg yolk.
15. Bake in the oven for 20 minutes at 180 degrees.
