If you still have bottles of wine left over after a feast, you shouldn't pour it down the drain. Alcohol can be used for further cooking. The main thing is to store it properly.

How to preserve leftover wine:

If there is a little wine left at the bottom of the bottle, don't just leave it to sour. You can pour the alcohol into an ice cube tray, cover it with plastic wrap to keep the ice crystals out, and freeze it. The next day, add it to sauces, soups, risottos, and stews for a spicy flavor.

1. Make tomato puree: bake 3-4 tomatoes, peel them and beat into a puree with a blender. You can use ready-made canned tomatoes (but not tomato paste).

2. Prepare the base: add onion to 2-3 tbsp of oil and cook over low heat until golden brown.

3. Add dry rice and fry for 4 minutes, stirring. The rice should gradually become transparent.

4. Add wine and cook until it evaporates but do not let the rice dry out.

5. Add 1 ladle of broth (water) and cook, stirring constantly, so that the rice is barely covered with liquid and acquires a creamy consistency. As soon as the rice becomes drier, add another ladle of broth. Repeat slowly, stirring until the rice is softened but still creamy.

6. As soon as the rice reaches the state of readiness but still remains hard, add tomato puree and spices (oregano, pesto).

7. Turn off the heat, add a piece of butter and grated cheese and mix. Add shrimp, mussels, and Parmesan cheese.
