According to Mark, the crust is one of the most important indicators of pie quality. Moreover, this crust should be both on top and bottom of the pie and differ only in the strength of the baking. After all, no one wants to take a beautiful pie with a golden brown crust out of the oven and see that its bottom is completely soggy.
To avoid such disappointments, you just need to follow Greenaway's advice. Mark advises to preheat the baking sheet thoroughly before putting the cake on it and baking it.
To get a beautiful and golden brown crust on top of the cake, Mark advises against using egg yolk with milk. Instead, sugar diluted in water in a 1:1 ratio will do just fine. Greasing any dish with this mixture will result in an amazing crispy crust.
