  • 2 eggs
  • 150 g of savoyardi biscuits
  • 50 g of sugar
  • 250 g of mascarpone
  • 200 g of pre-brewed strong coffee
  • 2 tbsp of cognac or whiskey, rum, Marsala wine, or any liquor. If without alcohol, it can be syrup: caramel, Irish Cream or just coffee

1. Mix brewed coffee, cognac and syrup.

2. Separate the whites from the yolks, beat the yolks with sugar until lightened.

3. Add the mascarpone at room temperature and beat again until smooth and lump-free.

4. Beat the egg whites separately with a pinch of salt until stiff so that the mass does not spill out when the bowl is turned over, then combine with a spatula with the mascarpone and egg yolks.

5. Put a little cream on the bottom of the mold (you can do it in portions at once).

6. Dip the savoyardi biscuits in coffee for 2-3 seconds (if you like more juicy biscuits, you can keep them for 5 seconds) and put them in a mold. You can divide into pieces to make a solid layer of cookies.

7. Then cream and cookies again - and so on to the top of the mold.

8. Sprinkle with cocoa or grated chocolate on top. Leave in the refrigerator for 2-3 hours.
