How to make delicious tangerine cracked cookies: a very atmospheric seasonal pastry

In winter, it's a great idea to make aromatic tangerine cookies with warming tea. If you use the proposed technology, they will turn out to be very crispy and moderately sweet, with attractive cracks on top. This is the perfect dessert for family tea parties.
The idea of making delicious tangerine cracked cookies was published on the Instagram page of food blogger Valeria Veligura (yummy.lera). The pastries are very flavorful.
Ingredients:
- 220 g flour
- 180 g of icing sugar
- 10 g of baking powder
- a pinch of salt
- 1 small egg
- zest of 2 tangerines
- 40 ml of tangerine juice
- orange dye - optional
- 60 g of butter
- sugar and powdered sugar - for rolling ⠀
Ingredients for the filling:
- 150 g cream cheese
- 15 g of icing sugar
- 15 ml of cream
- 15 ml of tangerine juice
- 1 tsp vanilla extract ⠀
Ingredients for the tea:
- 100 g of fresh or thawed sea buckthorn
- 1 orange
- 2 cinnamon sticks
- 10 g of ginger
- 500 ml of boiling water ⠀
Method of making the dough:
1. Sift the flour, add the powder, baking powder, salt and mix. Separately, combine the egg, tangerine zest and juice and, if desired, the coloring.
2. Add the liquid ingredients and soft butter to the dry ingredients and knead the dough with a spatula. It will be sticky, so cover it with cling film and put it in the refrigerator for 2 hours or overnight.
3. For the filling, combine cream cheese, powder, cream, tangerine juice and vanilla extract. On any flat surface with cling film, form 18 small balls and put them in the freezer until they are completely frozen. ⠀
4. Take 30 g of dough, put the filling in the center (or you can do without it) and form a ball.
5. For a beautiful pattern, first roll in sugar and then in powdered sugar.
6. Put them on a baking sheet with parchment at a distance from each other and bake in a preheated 180-degree oven for 12-15 minutes.
