How to cook millet to make it tasty and useful

Millet is a very specific grain that has a bitter taste after boiling. It can also feel heavy in the stomach. But this product is actually very healthy: it just needs to be cooked properly.
The idea of cooking delicious pumpkin porridge with millet was published on the Instagram page of food blogger Olena Zeleniak (foodstories.helen). The cereal needs to be soaked before cooking.
Ingredients:
- 200 g millet
- 300 g of pumpkin
- 200 ml of water
- 200 ml of coconut milk (can be regular)
- salt - to taste
- butter - to taste
- almond flakes
Method of preparation:
1. Soak millet overnight in water with a tablespoon of lemon juice or a teaspoon of apple cider vinegar. You can also use a tablespoon of sourdough starter. The groats will be safe for the stomach after soaking.
2. Rinse the millet under running water.
3. Pour water and milk, put on fire.
4. Once boiling, add the pumpkin and cook over medium heat until tender. If there is not enough liquid, you can always add a little more milk.
5. After cooking, add a little salt, as well as butter or ghee.
6. Add almond flakes before serving.
