Ingredients:
- chicken liver - 350 g
- milk for soaking
- medium onion
- garlic - 4 cloves
- butter - 100 g
- cognac - 50 g
- cream 33% - 100 g
- salt - 1/2 tsp
- thyme
- pepper
Method of preparation:
1. Soak chicken liver in milk for several hours.
2. Rinse in clean water.
3. Peel off any excess fat.
4. Cut onion into half rings.
5. Chop garlic into small pieces.
6. Heat oil in a frying pan.
7. When it boils, add liver.
8. Then add onion and garlic.
9. Fry for 7-10 minutes.
10. When the product is caramelized, add cognac.
11. Simmer for a few minutes.
12. Add cream, thyme, salt, pepper, and keep on the stove for a few minutes until thickened.
13. Remove thyme.
14. Put the liver in a blender.
15. Beat until smooth.
16. Serve in a deep bowl with melted butter and red pepper on top. Leave in the refrigerator for several hours before serving.
