Beetroot is a versatile and budget-friendly vegetable that can be used to make not only salad and borscht but also snacks. One of them is beetroot caviar. It can be made and stored for the winter or served with bread right away.
Chef Anatolii (dobrovolskiy_hchef) shared a recipe for beetroot caviar with prunes and garlic on his Instagram page.
Ingredients:
- beets - 2 pcs
- prunes - 10 pcs
- vegetable oil
- tomato paste - 8 tsp
- garlic - 1 clove
- salt, pepper
Method of preparation:
1. Boil beets and grate them on a fine grater.
2. Grate prunes as well.
3. Put the beets and prunes in a frying pan heated with oil, add tomato paste, salt and pepper. Grate garlic on top. Stir and immediately remove from heat. Leave to cool.
4. Serve with bread.
