Quiche is a very satisfying pastry based on crispy dough with a juicy filling. It is much easier to prepare than any pies or casseroles. It is delicious with red fish and spinach.

Food blogger Iryna Kozachuk (irina_kozachuk_) shared her recipe for a hearty quiche with red fish and spinach on Instagram. There is no need to wait for the dough to rise – you can immediately distribute it in the mold and put the filling in.

Ingredients for the base:

  • flour - 280 g
  • butter - 150 g
  • salt - 0.5 tsp
  • eggs - 1 pc
  • cold water - 2 tbsp.

Ingredients for the filling:

  • red fish - 350 - 400 g
  • spinach - 150 g
  • mini mozzarella (can be replaced with hard cheese) - 125 g
  • cream 30% - 300 ml
  • eggs - 4 pcs
  • salt, ground black pepper

Method of preparation:

Grind the ingredients for the dough into crumbs

1. For the dough, add the cold butter to the flour and grind it into crumbs, add salt.

2. Pour in the egg and water and knead the dough quickly.

3. Wrap in plastic wrap and leave in the refrigerator for an hour.

4. Cut the fish into small pieces.

5. Sauté the spinach in butter, salt and pepper.

6. Spread the dough over the mold (24 cm), forming the sides.

7. Put spinach, fish, mozzarella. If using hard cheese, add it to the filling. For the filling, mix eggs with cream, salt and pepper. Pour over the fish and spinach.

8. Bake in a preheated 180-degree oven for 40-45 minutes. Cut after cooling.
