Healthy beet pancakes: what to add to the batter

Beets are the basis not only for borscht and salads but also for sweet pancakes. The dish is very healthy and nutritious. To keep the products in shape and ensure they do not fall apart, you need to add oatmeal to the batter.
The idea of making beetroot pancakes was published on the Instagram page of food blogger Nina (ninatkachseniak).
Ingredients:
- 35 g instant oatmeal (you can use oat flour)
- 10 g coconut flakes (coconut flour)
- 1/4 tsp of baking powder
- 60-70 g of boiled beetroot
- 1 egg
- 30 ml of water
Method of preparation:
1. Grin oatmeal and coconut flakes in a coffee grinder to flour (or use ready oatmeal and coconut flour), add baking powder and mix.
2. Grate beetroot on a fine grater and add water and egg. You can mix with a blender until smooth or stir with a spoon.
3. Add dry ingredients, mix well and let stand for 5 minutes.
4. Fry in a preheated pan with oil or butter under a lid over low heat until tender. You will have 4-5 pieces.
