German potato soup with sausages is very simple, budget-friendly, and quick to prepare - about 30 minutes. Thanks to a special cooking technology, the soup is very thick, rich and flavorful.
Food blogger Kateryna Movchan, who goes by katarina_movchan, shared a recipe for German sausage soup on her Instagram page.
Ingredients:
- chicken broth - 1.5 liters
- potatoes - 7 pcs
- carrots - 1 pc
- onion - 1 pc
- celery stalk - 4-5 pcs
- salt, pepper, bay leaves
- parsley
- vegetable oil - 1 tbsp (for frying)
- Frankfurt sausages - 4 pcs
Method of preparation:
1. Dice the onion, celery and carrots. Fry for 5 minutes.
2. Cut the potatoes into cubes. Add to the vegetables and fry for 2 minutes.
3. Pour in hot broth, adding salt, pepper and bay leaves. Cook under the lid until the potatoes are tender, about 20-25 minutes.
4. When the potatoes are cooked, mash them with a special pestle. It is necessary that the consistency of the soup was not homogeneous: some potatoes mashed into mashed potatoes, and some remained intact.
5. Cut the sausages and add to the soup, chop and add the parsley. Bring to a boil and remove from heat.
