  • 2 tablespoons gochujang
  • 3 cloves of garlic
  • 1 tbsp of sugar
  • 1 tablespoon of sesame oil
  • 1 teaspoon of rice wine vinegar
  • 1 tbsp organic water
  • 2 tsp sesame seeds

Vegetables:

  • 100 g of carrots
  • 1 zucchini
  • 100 g of porcini mushrooms
  • 200 g of spinach
  • 100 g of bean sprouts

Ingredients for the spinach and bean sprouts seasoning:

  • 1 tsp. garlic
  • 1 tsp. sesame oil
  • 1 tsp. sesame seeds
  • 1/4 tsp of salt

Method of preparation of bibimbap sauce:

1. Combine all the listed ingredients for the sauce.

2. Set aside.

Method of cooking marinated beef:

1. Marinate the beef with the ingredients listed above for 30 minutes or overnight.

2. Set aside.

3. Heat 1 tablespoon of oil, add beef and cook beef for 4-5 minutes until cooked through and set aside.

Method of cooking vegetables:

1. Heat 2 teaspoons of oil over medium-high heat and cook the mushrooms for 2-3 minutes.

2. Season with salt and set aside.

Method of preparation:

2. Take out a little bit of the middle to make a shell.

3. Heat olive oil in a small skillet over medium heat and fry the bagel pieces.

4. When browned, remove from heat and set aside.

5. Spread hummus or baba ghanoush equally in both bagel shells and set aside.

6. Mix lettuce, tomatoes, avocado, red onion, olives, and capers with the salad dressing.

7. Spoon the mixture into the bagel shell.

8. Sprinkle with Parmesan cheese, if using, and top with the fried bagel slices.

  • 1 medium yellow onion, diced
  • 1 small fennel bulb or 2 celery stalks, finely chopped
  • 2 medium carrots, finely chopped
  • 1 teaspoon sea salt, plus more to taste
  • freshly ground black pepper
  • 3 cloves of garlic, grated
  • 1 tablespoon of tomato paste
  • 1 teaspoon chopped fresh rosemary
  • a jar of chopped tomatoes
  • 3 cups cooked cannellini beans (drain and rinse)
  • 4 cups of vegetable broth
  • a little parmesan cheese, if desired
  • 1 cup of pasta ditalini or other small pasta
  • 2 large cabbage or chard leaves (cleaned from the stalks and torn)
  • a pinch of red pepper flakes

Method of preparation:

1. Heat olive oil in a large saucepan over medium heat. Add onion, fennel, carrot, salt and a few ground peppers. Cook for 10-15 minutes or until soft, stirring occasionally.

2. Add garlic, tomato paste and rosemary and cook, stirring, for 1 minute. Add tomatoes and their juice, beans, broth and parmesan rind, if using. Simmer for 20 minutes.

3. Add pasta and simmer for another 10 minutes. Add kale and red pepper flakes. Cook until the kale is wilted. Season to taste and serve.
