Fine focaccia with cheese instead of bread: from the simplest yeast-free dough

Italian flatbread, or focaccia, is a delicious alternative to classic bread. The base for the dish is made with water, sometimes with yeast, and can also be topped with sausage, cheese, tomatoes, spices, or herbs.
The recipe for focaccia with cottage cheese was published on one of the cooking blogs (koly4ca_zhanka) on Instagram.
Ingredients:
- flour - 400 g
- water - 200-210 ml
- salt - a pinch
- olive oil - 20 ml
- cottage cheese - 500 g (alternatively, you can mix cottage cheese with sour cream)
Method of preparation:
1. For the dough, mix the sifted flour, salt, water and oil. Knead first with a spoon, then with your hands, knead for about 7 minutes. The dough should be elastic.
2. Brush the dough with oil and leave it to rest for 30-40 minutes.
3. After that, sprinkle the work surface with flour and divide the finished dough into 2 parts. First, you can roll out the dough with a rolling pin, then stretch it with your hands (stretch it almost until it is transparent). Put one layer of dough on a greased baking sheet.
4. Put cheese on top and cover with a second layer of dough. Secure the sides and grease the top with oil. Make so-called holes.
5. Bake at 250 degrees for 10-15 minutes.
