After cooking, for example, pasta with shrimp, there is a lot of waste. We're talking about shrimp shells and heads, which usually just go into the trash. But why waste food if you can make another dish out of it?
For example, shrimp shells and heads make a delicious and rich broth that will impress with its incredible flavor. A food blogger with the nickname dribka.soli shared the recipe for this wonderful dish on Instagram.
Ingredients for 1 liter of broth
- Shrimp heads and shells - 300-400 g
- Ginger - 3-4 cm
- Onions - 1 pc
- Parsley with stems - 20 g
- Soy sauce - 3 tbsp
- Fish sauce - 1 tbsp
- Oil
- Miso paste - 1-2 tsp
- Chili pepper - to taste
- Anise
- Coriander
- Zira
Method of preparation
1. Fry the onion, ginger, parsley, chili and spices in a frying pan with oil. The darker (but not burnt) the vegetables are, the richer the broth will be.
2. Add the shrimp shells and heads to the pan and fry for 10 minutes, stirring occasionally.
3. Pour 1.5 liters of water into a saucepan and bring to a boil. Add the sauces and the entire contents of the pan. Cook over medium heat for 20 minutes.
4. Strain the broth, return it to the heat and boil the noodles in it.
5. While the noodles are cooking, prepare the toppings. It can be broccoli, shiitake, chili, egg, etc.
6. Once the noodles are ready, pour the broth into plates, add the toppings, and enjoy the incredible taste.
