Delicious pancake cake with canned cherries: suitable for any occasion

This cake is suitable for family home tea parties, and even for celebrations. And the most important thing is that you will prepare it very quickly, because it is based on ordinary pancakes. You can wrap canned cherries that you prepared in the summer.
The idea of making a delicious pancake cake was published on the Instagram page of food blogger Victoria with the nickname vika_tolokova23. The cream perfectly soaks the pancakes, and they hold their shape perfectly.
Ingredients for pancakes:
- 3 eggs
- 50 g of sugar
- 300 ml of milk
- 110 g of flour
- 40 g of cocoa
- 120 ml of boiling water
- 40 ml of vegetable oil
Ingredients for the cream:
- 600 g sour cream
- 70 g of powdered sugar (to taste)
- 300 g of cherries
- 20 g of corn starch
- 50 g of sugar
Method of preparation:
1. Add starch and sugar to the cherries, put on medium heat and stir constantly until thickened.
2. Transfer to a bowl, cover with cling film and let cool completely.
3. In a bowl, mix the eggs and sugar, add milk, sifted flour, cocoa, oil, and boiling water, and mix well.
4. Fry the pancakes in a well-heated frying pan. You should get 15 pancakes.
5. For the cream, mix sour cream with powdered sugar.
6. Put the cream and cherries on 9 pancakes and wrap them in rolls.
7. Put 5 pancakes, cream, three pancakes in tubes, cream, three pancakes again, cream, three pancakes, cream, one pancake on the sides and bottom of a round mold with a diameter of 18-20 cm and wrap the edges of the pancakes on top.
8. Put the cake in the refrigerator for at least 3 hours.
9. If desired, the cake can be decorated before serving.
