Delicate Lviv cheesecake without flour with semolina: we share the secrets of making a popular dessert

Lviv cheesecake is a hallmark of Western Ukraine. The dessert is based on cottage cheese mass, to which poppy seeds, various raisins, and candied fruit are added. In the classic version, flour is added to the mass to keep its shape. But it would be much better to use semolina.
The idea of making a fluffy Lviv cheesecake without flour and semolina is published on the receptuk.ua culinary page on Instagram. The curd dough will be very tender, airy and not clogged.
Ingredients:
- fat cottage cheese 9% or more - 700 g
- semolina - 2 tbsp
- sugar - 3 tbsp
- butter - 100 g (melt)
- vanilla - a packet
- eggs - 4 pcs.
- zest of half an orange, can be replaced with lemon
- salt - on the tip of a knife
- poppy seeds - 50 g (can be replaced with ready-made poppy seed filling)
- raisins 100 g (rinse and soak for half an hour)
Method of preparation:
1. Rinse the poppy seeds, add 100 g of water and cook over low heat for 15 minutes. Then drain completely and beat well with a blender.
2. Combine all the ingredients except poppy seeds and raisins and beat with a blender until smooth and lump-free.
3. Take 30 percent of the total mass and mix it with whipped poppy seeds.
4. Add the raisins to the rest of the curd mass (no need to dry them, just drain well).
5. First put the raisin mixture into the parchment-lined baking dish, smooth it out, then put the curd mixture with poppy seeds on top. Smooth it out well. Shake the mold several times to ensure that the cottage cheese is well distributed in the mold and does not grow, so that it rises evenly.
6. Bake in a preheated oven at 170 degrees for 45 minutes.
7. Cool the cheesecake completely in the mold, put it in the refrigerator overnight. In the morning, you can take it out and turn it over so that the poppy seed mass is on the bottom.
8. Pour melted chocolate over the top of the cheesecake.
