Ingredients:
- Eel - 200 gr
- Eggplant - 2 small or 1 large
- Pistachios - a handful
- Unagi sauce - 4 tbsp
- Sesame seeds - 1 tsp
- Bonito hondashi fish broth granules (can be omitted) - 1 tsp.
- Green onions - 1 stalk
- Greek yogurt - 2 tbsp
- Salt
- Pepper
Method of preparation:
1. Cut the eggplant in half and make diagonal cuts in the flesh.
2. Add salt, pepper and olive oil. Put them in the oven at 200 degrees until the flesh softens.
3. Cut the eel and onion into small pieces. Add unagi sauce, sesame seeds, broth granules, and chopped pistachios.
4. Remove the flesh from the eggplant, chop it, and mix it with the eel.
5. Mix the filling well and stuff the eggplants with it.
6. Pour the unagi sauce over the eggplant so that it covers the entire surface. Put them in the oven for 15 minutes.
7. Serve the dish with Greek yogurt. Mix it with the eggplant filling before eating.
