Can food be fried in butter: an unexpected answer

The answer is simple – you can fry in butter. But there is one caveat: ordinary butter is not a very good option, ghee is the most suitable. This type of butter is very common in India, and its name comes from there. You can buy it in a supermarket or make it at home.

1. Cut the butter into pieces.
2. Put the butter pieces in a saucepan and melt over low heat. This process is called clarification. Under the influence of temperature, the butter is divided into two layers: butterfat, which is needed for frying, and whites, which should be separated with a spoon (they will not be needed anymore).
3. Pour the finished fat into a container and store it in the refrigerator.
