Bright and tasty carrot roll: a great dish for both everyday and festive table

The recipe for carrot roll was shared on her Instagram page by a food blogger named zhuravlina_cooking. She also told us what to add to the filling to make it tender and not spread.

Ingredients

  • Peeled carrots - 600 g
  • Eggs - 5 pcs
  • Cream cheese - 300 g
  • Salt - 1 tsp
  • Black pepper
  • Dill - a bunch
  • Oil for frying

Method of preparation

1. Grate the carrots on a fine grater and fry until soft in a frying pan with butter, salt and pepper.

2. Transfer to a bowl and leave to cool to room temperature.

3. Separate the whites from the yolks. Whisk the whites with a pinch of salt until stiff and fluffy.

4. Add the yolks to the carrots and mix.

5. Gradually add the whites to the carrots and mix with a spatula.

6. Put the dough on a baking sheet covered with parchment and bake in a preheated 180 degree oven for 15 minutes. Cool for 10 minutes.

7. Mix the cream cheese with the chopped dill.

8. Put the sponge cake on cling film and remove the parchment.

9. Put the filling and wrap the roll.

10. Wrap the finished roll in cling film and refrigerate.
