An elementary tea pie with frozen cherries: the dough is very crispy

Frozen cherries that have been in your freezer since summer are worth using to make a simple tea pie. The dough is crispy and goes well with the juicy filling. And it bakes quickly.
The idea of making a pie with frozen cherries was published on the Instagram page of food blogger Victoria Marchenko (vika_marchenko__). It contains not only berry but also cheese filling.
Ingredients:
- egg - 2 pcs.
- sugar - 60 g
- a pinch of salt
- flour - 250 g
- baking powder - 5 g
- butter - 100 g
Method of preparation:
1. Mix eggs with sugar and a pinch of salt until smooth.
2. Rub the sifted flour and baking powder with the cold butter into crumbs.
3. Combine the egg mixture with the crumbs and knead the dough (the mass should be homogeneous, do not knead it for a long time).
4. Put the dough into the mold, forming the sides, cover with cling film and refrigerate.
Ingredients for the cheese filling:
- Philadelphia cheese - 600 g
- powdered sugar - 70 g
- vanilla sugar - 10 g
- egg - 2 pcs.
- corn starch - 15 g
Method of preparation of the filling:
1. Combine all the ingredients until smooth (it's best to use an immersion blender).
2. Pour the cottage cheese filling onto the chilled shortbread base and bake at 175-180 degrees for 35 minutes (the temperature and baking time depends on your oven).
3. Cool the finished pie a little.
Ingredients for the cherry filling:
- frozen pitted cherries - 500 g
- sugar - 70 g
- corn starch - 15 g
How to prepare the cherry filling:
1.Put the cherries on the fire to let the juice flow.
2. Mix sugar with starch and add to the cherries, stir, and cook until thick.
3. Cool and spread on top of the curd filling of the baked pie.
4. Can be eaten cold and warm.
