All-purpose dough for puffy steamed dumplings: any filling will do

Steamed dumplings are very tender and fluffy. And any filling is suitable. The most important thing is to make the dough correctly so that it doesn't stick to your hands and fall apart during boiling.
The idea of preparing all-purpose dough for steamed dumplings was published on the Instagram page of food blogger Polina with the nickname polli_cooking. The most delicious choice for the filling is cottage cheese.
Ingredients:
- warm milk - 250 ml
- sugar - 1 tbsp
- salt - a pinch
- oil - 1 tbsp
- live yeast - 20 g
- flour - 400 g
Ingredients for the filling:
- cottage cheese 5-9% - 200 g.
- vanilla sugar - 0.5-1 tbsp.
Method of preparation:
1. Add sugar, salt and oil to warm milk and stir.
2. Add yeast.
3. Mix well until the yeast dissolves and add flour in two stages.
4. Knead the dough first with a spatula and then with your hands on a floured surface. If necessary, add a little flour, but no more than 1-2 tbsp.
5. Cover the dough with a plate or towel and leave to rest for 10 minutes.
6. Meanwhile, fill a saucepan with half a cup of water and tie in cheesecloth.
7. Put on the fire and bring to a boil.
8. For the cottage cheese filling, add vanilla sugar to the cottage cheese and mix well with a fork. If you do not sprinkle the dumplings with sugar, add sugar to the filling to taste.
9. Roll out the dough into a 2-3 mm thick layer and cut out circles using a glass.
10. Make dumplings.
11. Steam the dumplings for 5 minutes, making sure to cover with a lid. Do not open the lid during cooking.
12. Put the finished dumplings in a bowl with melted butter and sprinkle with sugar.
