Pasta is a dish most often found in Italian restaurants. But it will be truly Ukrainian if you add a sauce of fragrant yellow tomatoes. You can easily make the pasta itself from a very simple and elastic dough.
Famous Ukrainian chef Volodymyr Yaroslavskyi (yaroslavskyi_vova) shared the idea of making delicious Ukrainian pasta on his Instagram page. Instead of homemade pasta, you can use regular pasta from a packet.
Recipe for homemade Ukrainian pasta

Ingredients for the sauce for 3 large servings:
- 500 g yellow tomatoes
- 30-40 g of garlic
- 50 g of white wine
- oil, hot pepper, salt
Ingredients for the oven (spaghetti):
- 220 g wheat flour
- 60 g of corn flour
- 140 g of sparkling water

1. Cut the tomatoes, blanch in boiling water for 30-40 seconds, remove them to ice water, peel off the skin, and cut into large cubes.

2. Pour oil into the frying pan, set a small fire, and add chopped garlic (you need quite a lot of it).
3. Fry the garlic over very low heat so that it does not change color.

4. Stop frying with wine, add chopped tomatoes, and simmer over medium heat for 15 minutes.
5. Add salt and hot pepper to taste. At the end, add fresh herbs (thyme, oregano, basil).

Cooking method of the oven:
1. Mix wheat flour with corn flour, add soda water, knead the dough.
2. Let it stand for 20-30 minutes and roll out thin bundles to resemble spaghetti as much as possible.

3. Boil the pasta in well-salted water for 3-4 minutes, add to the sauce, and heat for a minute and a half, if necessary, add the water in which the spaghetti was cooked to form a sauce.
4. Add more oil.

5. Serve with mozzarella, burrata, or parmesan. The sauce itself can be stored in the refrigerator for a week. You can use any of your favorite types of pasta instead.
