How to prepare spectacular lemon tiramisu: tastier than the classic one

If you want a light dessert with a fresh flavor, lemon tiramisu is a great option. It differs from the classic version in its filling as delicate lemon curd is used instead of cocoa. It is not only delicious but also very colorful.

The idea of making a delicious lemon tiramisu was published on the Instagram page of food blogger Victoria with the nickname cook_with_me_at_home. As usual, savoiardi is used for the base.

Ingredients:

  • savoiardi cookies - 400 g.

For the soaking:

  • lemon juice - 100 ml.
  • water - 200 ml.
  • sugar - 100 g.
  • zest of one lemon.

For the lemon curd:

  • yolks - 6 pcs.
  • sugar - 100 g
  • lemon juice - 150 ml.
  • starch - 1 tsp
  • butter - 75 g

For the cream:

  • mascarpone - 250 g
  • cream (from 30%) - 250 ml.
  • powdered sugar - 50 g

Method of preparation:

1. Peel lemons, beat in a blender and strain through a sieve.

2. For the soaking, bring water, lemon juice, sugar, zest to a boil and cook for 2-3 minutes. Strain and let cool.

3. For the curd, put yolks in a saucepan, add sugar and stir. Add juice and starch and stir.

4. Bring to a boil over medium heat and thicken, stirring constantly. If there are lumps, rub through a sieve.

5. Add butter and stir. Cover with contact foil and cool.

6. For the cream, lightly whip cold cream, add powder and whip again.

7. Add mascarpone and beat until fluffy.

8. Put soaked savoyardi biscuits, half the cream, half the curd, another layer of soaked biscuits, cream and curd in layers in the mold.

9. Let it brew for several hours.
