Without tomatoes: homemade zucchini ketchup with spices and onions

Homemade ketchup can be made not only from tomatoes, but also from young zucchini and onions. To ensure that the zucchini ketchup is tender and smooth, choose only young zucchini for the sauce.

Culinary expert Tatiana Litvinova shared a recipe for a delicious, light zucchini ketchup with tomato paste and cloves on Instagram.

Ingredients:

  • zucchini - 1,5 kg,
  • onion - 0.5 kg,
  • tomato paste - 0.5 kg
  • chili pepper - 1 tsp.
  • sugar - 2-3 tbsp.
  • 9% vinegar - 70 g
  • peppercorns - 10 g
  • 5-6 cloves
  • 5-6 bay leaves
  • salt - 2 tbsp.

Method of preparation:

1. Chop the zucchini and onion. Season with salt, mix and leave for 10 minutes.

2) Place the bay leaves, cloves and black pepper in cheesecloth and secure with toothpicks. Put this bag in with the zucchini. Cook over the highest heat until the liquid has almost completely evaporated, stirring occasionally.

2. Remove the spices and blend the zucchini and onion until smooth.

3. Add the chilli, sugar, tomato paste, vinegar to the zucchini and cook for another 10 minutes. Cover the sauce with a lid or sieve while cooking.

4. Put the prepared ketchup into jars and preserve.
