The chef shared a recipe for a light dinner salad, which is made of quinoa, vegetables and herbs on Instagram.

Ingredients:

  • 70 g of quinoa (dry)
  • 1 avocado
  • 1 tomato
  • 0.5 bell pepper
  • 1 cucumber
  • 0.5 red onion
  • parsley/cilantro
  • salt, pepper
  • lemon juice (to taste)
  • 2-3 tbsp. olive oil

Method of preparation:

1. Pre-boil and cool quinoa. Put it in a bowl.

2. Add diced avocado, tomato, pepper, cucumber, red onion, and parsley.

3. Add salt, pepper and lemon juice and season with olive oil.
