Useful salad of vegetables and cereals for a quick dinner: you do not need a lot of products
Fresh vegetables and cereals can be a great combination of foods to make hearty and delicious salads. For example, cold quinoa and couscous can be the perfect base for salads.
The chef shared a recipe for a light dinner salad, which is made of quinoa, vegetables and herbs on Instagram.
Ingredients:
- 70 g of quinoa (dry)
- 1 avocado
- 1 tomato
- 0.5 bell pepper
- 1 cucumber
- 0.5 red onion
- parsley/cilantro
- salt, pepper
- lemon juice (to taste)
- 2-3 tbsp. olive oil
Method of preparation:
1. Pre-boil and cool quinoa. Put it in a bowl.
2. Add diced avocado, tomato, pepper, cucumber, red onion, and parsley.
3. Add salt, pepper and lemon juice and season with olive oil.
