For this cake, you can choose one of three bases: sour cream, yogurt, or kefir. You can also add absolutely any filling. Therefore, you will have the ingredients for this dessert at any time. It's perfect for quick baking before guests arrive.
The idea of making a cupcake for which any filling is suitable was published on the Instagram page of food blogger Polina with the nickname polli_cooking.
Ingredients:
- 2 eggs
- 100 g of sugar
- vanilla
- 130 g sour cream/yogurt/kefir (choose what you have in the fridge)
- 50 g butter or vegetable oil
- 230 g of flour
- 1 tsp. baking powder
Method of preparation:
1. Add sugar and vanilla to the eggs and mix well (no need to beat for a long time).
2. Add sour cream/yogurt/kefir and melted butter or oil. Mix well.
3. Sift the flour and add the baking powder. Knead the dough.
4. Add the filling.
5. Pre-soak in hot water, rinse, and dry (for dried fruits).
6. You can also add: chocolate, lemon zest, dried fruits, berries, and fruit.
7. Transfer the mass to a baking dish and send it to the oven preheated to 180 degrees for 40-45 minutes.
8. Check readiness with a wooden stick.
